Butter-Sauteed Apples with Almonds, Raisins, and Maple Syrup

Use a wok or roomy frying pan so that you may saute the apple slices without crushing or breaking them apart.
1 cup sliced almonds 4 Tablespoons unsalted butter 1 teaspoon cinnamon 1 teaspoon vanilla extract 4 Golden Delicious Apples (2 lbs.), peeled and cut into 1/4 inch slices 1/2 cup raisins 1/2 cup maple syrup
1. Heat wok over medium heat. Add almonds, and cook 2 to 3 minutes, or until toasted and golden brown, stirring constantly. Transfer almonds to a plate.
2. Melt butter in wok over medium heat, then add cinnamon and vanilla. Reduce heat to medium-low and add apples. Cook apples 10 minutes, or until softened, stirring frequently but gently. Add raisins and maple syrup, increase heat to medium, and cood 3 to 5 minutes more until syrup thickens.
3. Divide apples among 4 bowls and garnish with toasted almonds. May be served with your favorite ice cream, whipped cream, or granola.
